900 grams (2 pounds) free-range skinless boneless chicken breasts, ground (minced)
1 large onion diced
1 garlic clove minced
2 stalks celery chopped
1 capsicum finely chopped
392 grams (14 ounces) canned tomatoes
5 tablespoons tomato paste
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon sambal olek (chilli paste)
2 tablespoons cold-pressed virgin olive oil
3 cups purified water
Brush the base and sides of a saucepan with oil and heat.
Add the ground chicken and brown, then add all the other ingredients and simmer for 1 to 2 hours.
When mixture reduces add more water.
Serve with whole wheat or gluten-free pasta.*
